Apple and Bacon Stuffed Sweet Potatoes

Today was a big day for team Canada as we won gold in both Curling and Hockey (although due to the time change I’m not sure if they technically both happened today, but that’s besides the point)! Unfortunately I was at work so unable to watch most of these events. Actually, if you can believe it, I have yet to watch any of the Olympics at all so far. Being in the Dominican for the first week and not having cable kind of derails any Olympic-watching fun. However, I will still celebrate tonight! How you ask? With bacon, of course. These apple bacon stuffed sweet potatoes are a great mix of sweet/savoury that it feels like a treat to eat. This is a keeper, friends.


4 large sweet potatoes*
3 slices bacon, chopped
2 gala apples, diced
3 tablespoons fresh sage
1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
4 oz goat cheese
Salt + Pep to taste

* I halved this recipe with only one sweet potato because it was a GIANT.


Preheat Oven to 350 degrees F. Poke holes in sweet potato and wrap tightly in foil. Bake for 45-60 minutes (or if you have a giant like mine, 60-80) or until Sweet Potato is tender to the touch. Let sit until cook enough to handle.

While potatoes are cooking, heat frying pan over medium heat. Add bacon and cook until crispy. Remove bacon with slotted spoon and place on a paper towel to drain. Add apples, sage and nutmeg to pan and cook until apples are soft and starting to caramelize. Place bacon back in pan and set aside until ready to stuff.

Once sweet potatoes are partially cool, cut a slit down the middle and remove flesh. Add flesh to bowl with 3 oz goat cheese, cinnamon, nutmeg, and salt and pepper to taste and mash.

Scoop flesh back into skins and re-warm potato if necessary. Top with remaining goat cheese and apple/bacon mixture.

You now have yourself an amazing side or, if you’re me and dining by your lonesome with a giant sweet potato on your hands, meal!
